  • 1 cup celery, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Grilled Corn on the Cob with Herb Butter

  • 4 ears of fresh corn on the cob
  • 1/4 cup vegan butter, melted
  • 2 tablespoons mixed herbs (parsley, basil, cilantro), chopped
  • 1/2 teaspoon salt

Instructions

Grilled Vegetable Skewers  

1. Preheat the grill to medium heat.  

2. In a bowl, toss chopped bell peppers, zucchini, and cherry tomatoes with olive oil, salt, and pepper.  

3. Thread the seasoned vegetables onto skewers, alternating colors for a vibrant presentation.  

4. Grill the skewers for about 10-12 minutes, turning occasionally until tender and slightly charred.  

5. Serve hot as a colorful side dish.  

Creamy Potato Salad 

1. Boil potatoes until tender but not mushy. Drain and allow to cool slightly.  

2. In a mixing bowl, combine diced potatoes, vegan mayo, mustard, chopped celery, salt, and pepper.  

3. Mix well until all the ingredients are evenly coated.  

4. Chill in the refrigerator for at least an hour before serving.  

5. Garnish with fresh herbs if desired.  

Grilled Corn on the Cob with Herb Butter

1. Preheat the grill to medium-high heat.  

2. In a small bowl, mix chopped herbs with melted vegan butter.  

3. Brush the herb butter generously over the corn.  

4. Place the corn on the grill, turning frequently until lightly charred and tender.  

5. Serve hot with an extra drizzle of herb butter for enhanced flavor.

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.  
  • For the potato salad, adding fresh dill or chives enhances the flavor.
