Ingredients

  1.  1 can of coconut milk
  2.  2 tablespoons green curry paste
  3.  400g chicken or tofu (for vegetarian)
  4.  1 cup eggplant, diced
  5.  1 cup bamboo shoots
  6.  1 handful Thai basil leaves
  7.  2 lime leaves (optional)
  8.  1 tablespoon fish sauce or soy sauce (for vegetarian)
  9.  Cooked jasmine rice (for serving)

Instructions

  • Heat a tablespoon of oil in a pan over medium heat.
  • Add the green curry paste and sauté until fragrant.
  • Gradually stir in the coconut milk, mixing well.
  • Add the chicken or tofu and let it simmer until cooked through.
  • Toss in the diced eggplant and bamboo shoots, cooking until tender.
  • Stir in Thai basil leaves and lime leaves for a fragrant finish.
  • Season with fish sauce or soy sauce.
  • Serve hot with steamed jasmine rice.

Notes

For a spicier version, add more green curry paste or fresh green chilies.
Substitute tofu for a vegetarian or vegan option.
