1 lb fresh mussels, cleaned
3 eggs
1 cup coconut milk
1 tbsp red or yellow Thai curry paste
1 tbsp fish sauce
1 tbsp lime juice
1 tsp sugar
2 cloves garlic, minced
1 small onion, chopped
1 tbsp vegetable oil
Fresh cilantro and red chili slices for garnish
1. Heat oil in a pan over medium heat. Sauté the garlic and onion until fragrant.
2. Add the Thai curry paste and stir until aromatic.
3. Pour in the coconut milk, fish sauce, lime juice, and sugar. Stir well and bring to a simmer.
4. Add the mussels, cover, and steam for about 5 minutes or until they open. Discard any that remain closed.
5. In a bowl, beat the eggs with a pinch of salt.
6. Heat a non-stick pan over medium-low heat and pour in a thin layer of the eggs, tilting the pan to spread evenly.
7. Cook until just set, then transfer to a flat surface.
8. Spoon the coconut curry mussels onto one side of the omelette and gently roll it up.
9. Slice the omelette roll into pieces and drizzle some extra coconut curry sauce over the top.
10. Garnish with fresh cilantro and red chili slices before serving.
