Roasted Potatoes (3)

Crispy, golden roasted potatoes with a perfectly fluffy interior. This easy recipe is a delicious side dish for any meal!

 

Ingredients

  • 2 lbs Russet or Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • 1 tbsp fresh rosemary or thyme, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and cut the potatoes into 1-inch cubes. If desired, soak them in cold water for 30 minutes to remove excess starch.
  3. Drain and pat the potatoes dry with a towel. In a large bowl, toss them with olive oil, salt, black pepper, garlic powder, and smoked paprika.
  4. Spread the potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
  5. Roast in the preheated oven for 35-45 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove from the oven and sprinkle with fresh rosemary or thyme and grated Parmesan cheese, if using.
  7. Serve hot and enjoy!

Notes

For extra crispy potatoes, soak them in cold water for 30 minutes before roasting. You can also parboil them for 5 minutes before roasting for a fluffier inside.
