  • 1 packet taco seasoning (or homemade blend)
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth (or chicken broth)
  • 8 oz uncooked pasta (penne or rotini works best)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions

  • Cook the Ground Beef:

    • In a large pot, brown the ground beef over medium heat until fully cooked.
    • Drain excess fat if necessary.
    • Stir in the taco seasoning and mix well.
  • Add Liquids and Pasta:

    • Add the can of diced tomatoes (including the juice).
    • Pour in the beef broth and bring to a boil.
    • Add the uncooked pasta and stir well.
  • Simmer and Cook:

    • Lower the heat to medium-low and cover the pot.
    • Let it simmer for about 10-12 minutes, stirring occasionally.
    • Cook until the pasta is tender and the liquid is mostly absorbed.
  • Add Cheese and Mix:

    • Stir in the shredded cheddar cheese until melted and well combined.
  • Garnish and Serve:

    • Serve hot with optional toppings such as sour cream, chopped cilantro, or sliced jalapeños.
