- 1 cup raisins
- ½ cup honey or maple syrup
- ½ cup unsweetened applesauce
- ½ cup peanut butter (or almond butter)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- ½ teaspoon baking powder
- 2 eggs (or flax eggs for a vegan option)
- Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking dish with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine oats, raisins, cinnamon, baking powder, and salt.
- Mix Wet Ingredients: In another bowl, whisk together honey, applesauce, peanut butter, vanilla extract, and eggs.
