1 lb (450g) beef sirloin or tenderloin, thinly sliced
2 tbsp butter
1 onion, finely chopped
2 cloves garlic, minced
1 cup mushrooms, sliced
1 cup beef broth
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
1 cup sour cream
Salt and black pepper, to taste
Fresh parsley for garnish
Cooked egg noodles or rice (for serving)
Heat a large skillet over medium-high heat. Melt 1 tbsp of butter and add the beef. Sear until browned on both sides, then remove from the skillet.
In the same skillet, melt the remaining butter. Add onions, garlic, and mushrooms. Sauté until soft and fragrant.
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well and let it simmer for 5 minutes.
Reduce the heat to low, then stir in the sour cream. Mix until smooth.
Return the seared beef to the skillet and let it simmer for another 3-5 minutes.
Season with salt and pepper to taste. Garnish with fresh parsley.
Serve hot over egg noodles, rice, or mashed potatoes.
